Rock Cakes

Crunchy Rock Cakes...
simple to bake (and even easier to eat!) Serves:12___ Bake time: 30mins___Prep time:10mins
              
Ingredients:
-225g Plain White Flour
-1Pinch Salt
-2tsp Baking Powder
-75g Unsalted Butter
-75g Golden Caster Sugar
-75g Currants (optional)
-0.25tsp Grated Nutmeg
-0.25 grounded mix spice
-1 Free Range Egg (beaten)
-2.5 tbsp whole milk

Method

1) Preheat the oven to 190℃, gas mask 5. Grease one or two baking trays.

2) Sift, all the  flour, salt and baking powder into a medium size mixing bowl.You can now rub the butter together until it looks and feels like bread crumbs.

3) Add in, all the sugar,fruit and spices. Also add the beaten egg and milk. Make sure it is nice and stiff.

4) Make golf ball sized balls with the mixture then place them on the greased baking trays.

5) Finally, cook them in the oven for 15 mins or until golden brown. Cool them on a cooling rack.

6) Eat! And Enjoy!
